This month is the perfect time to introduce ourselves to broccoli's colourful cousin! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Purple sprouting broccoli is at its best in March so make sure to keep an eye out when grocery shopping. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Try it in this excellent recipe, courtesy of @bbcgoodfood for a simple and satisfying seasonal meal.

Ingredients:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 ½ tbsp sesame oil
1 tbsp soy sauce
Thumb-Sized piece of ginger, grated
1 crushed garlic clove
1 tsp honey
2 sweet potatoes cut into wedges
1 lime cut into wedges
2 boneless skinless salmon fillets
250g purple sprouting broccoli
1 tbsp sesame seeds
1 thinly sliced red chilli
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat oven to 200°C and line a baking tray with parchment. Mix together 1/2 tbsp sesame oil, the soy, ginger, garlic and honey. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Put the sweet potato wedges, skin and all, into a glass bowl with the lime wedges. Cover with cling film and microwave on high for 12-14 mins until completely soft.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Spread the broccoli and salmon out on the baking tray. Spoon over the marinade and season. Roast in the oven for 10-12 mins, then sprinkle over the sesame seeds.

Remove the lime wedges and roughly mash the sweet potato using a fork. Mix in the remaining sesame oil, the chilli and some seasoning. Divide between plates, along with the salmon and broccoli.

Whilst we all love a sweet pancake, it's also nice to try something different. Why not explore the delights of the savoury pancake?

Masala dosa is the perfect alternative to a stack of crepe Suzettes. Spiced sweet potato masala fills these thin and crispy pancakes - especially delicious when dipped into a warm bowl of soup. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients
Dosa Batter as required
1 sweet potato
1 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tbsp urad dal
Half inch ginger
2-3 garlic cloves
4-5 green chillies
1 large onion, chopped
2 tomatoes, chopped
5-6 curry leaves
Pinch of asafoetida
1 tsp turmeric powder
1 bell pepper, chopped
1/2 cup green peas
1 tsp coriander cumin powder
2-3 tbsp chopped cilantro
Salt as required
Oil for making dosa
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions

Boil the sweet potato with salt and turmeric. Mash. Heat oil in a pan. Temper mustard and cumin seeds. Then add urad dal till it turns golden brown. Mash and add ginger and garlic along with minced green chillies.

Next add onion and saute. Now add the tomatoes, curry leaves, salt and asafoetida. Saute the tomatoes. Next add the peppers and green peas. Saute the veggies. Add the mashed sweet potato and mix.

It's time to add turmeric powder and coriander cumin powder. Mix it all together and take off the flame. Heat a skillet, Pour a dollop of dosa batter and spread it like a pancake. Add a spoonful of the sweet potato mixture and let it cook for a minute.

Fold both ends and close the dosa. Take it off the skillet. Serve with any chutney/sambhar.
