It is best served in a mug while lying in the heather, watching the grouse and the world fly by. I wanted to create a traditional, old-fashioned hearty soup, from all the good simple things – defiantly unsophisticated!
There are two parts to the soup, first a base to suspend the other ingredients, then a simple throw it all in and simmer… very easy, very honest, totally delicious! If you have any left-over lamb from a roast, or just have a hankering for something more carnivorous, you can add lamb to the recipe.”
